Low contrast is a common problem on Google Maps. Too little contrast can make your photos look dull, flat, without a lot of details, and uninteresting. As photos uploaded to Google Maps are often shown very small and between lots and lots of other photos, your photos should never be missing contrast. I think a bit too much contrast is a lot better than too little contrast.
In this illustration you can see the effects of too low (- -) to too much (+ +) contrast. Notice how the lowest (- -) looks a bit washed out and with nothing really white and nothing really black. The church looks bland and boring in my eyes.
Because I'm a big fan of having plenty of contrast, I tend to like the fourth version (+) better than neutral (0). What do you think?
Version + + is clearly too much.
Here you can see the effect of too little and too much contrast on different colors.
Notice, how the first version has nothing pits black. It is as if milk was purred over - -.
The colors get too hard and screaming in + +.

Some phones have a setting where you can select a default filter. This can be used to ensure all your shots have a bit extra contrast.
You should avoid shooting in low light conditions since this can result in lower contrast.
You can edit your photos before uploading them to Google Maps to add missing contrast. Learn how in How to adjust brightness, contrast, and saturation.
